Vinification process

Harvest: by hand
Pressing: gentle, with temperature kept at 20°C
Maceration: 25 days on the skins, then fermentation at 20°C
Maturation: in steel and in large 500-litre oak casks
Release: 6-8 months after bottling

Wine description

Appearance: purple-edgeddeep ruby
Bouquet: full, rich, fruity and spicy, with scents of fresh-mown hay.
Palate: generous and well structured, velvet-smooth, with mellow tannins well integrated with the acidity; the lengthy finish shows excellent fruit and spice as well.

Serving suggestions

Full-flavoured first courses, grills and stews, roasts of beef, pork, lamb, and kid, as well as medium-aged cheeses.

Serve at 18°C.
